Soy Success!

When I first learned how to do a tofu stir-fry in high school I was really good at it; however, the past few years I have struck out every time I attempted a tofu stir fry, and have eventually resorted to Pei Wei rather than produce soggy tofu again. Today I decided to be brave and try one more time, and I had great success!!!

Sooo, tonight for dinner I ate brown rice with fresh steamed green beans and a tofu stir-fry with onions and green peppers and a fire-hot Asian chili garlic sauce. And it was FIRE-HOT. But yummy. Of course a tofu stir fry would not be complete without chop sticks!

I took the final exam for my internship and did a-okay. Tomorrow is the "closing ceremony" kind of a luncheon type thing. Dave is going to take off a few hours of work to attend, which is nice. This weekend I get to go to a renal dietetics conference, then a conference for the Texas Dietetic Association. I am excited, it should be really interesting/educational.

Wow! That looks quite tasty! The colors are good on the white plate, too. You should photograph for food magazines.
