My favorite vegan salad

So usually when someone suggests I eat a salad it's kind of a slap in the face because there is soooo much more I like to eat in the realm of my diet-style than salad!!! Often when people think of vegetarianism they think all vegetarians eat is vegetables, but vegetarians include a great array of grains, nuts, seeds, beans, fruits, and vegetables in their diet.

I do, however, have a salad that I thoroughly enjoy and I made it today. It was kind of pretty so I took a picture:

Anyway here's what is in it:
1/3 head romaine lettuce, washed and chopped
1/2 C garbanzo beans, rinsed
1/4 avocado, sliced
1 large tomato, cut into wedges
1/4 granny smith apple, cut into thin wedges
1 oz walnuts, chopped
The dressing is a raspberry balsamic dressing, and I made it with a raspberry balsamic vinaigrette blended in a food processor with silken tofu, which gives the dressing a great consistency. The combination of these flavors is PERFECT. It is very yummy, and for a salad, it actually makes an excellent whole meal. Mmmm.
