The Food Bank rotation is good so far. I have been making educational materials, planning health fair displays, and my big project is a simulation on poverty and hunger for a high school social justice class. This rotation is much like my summer work for BYU doing nutrition education kits. Today I get to work from home because I have to make muffins as samples for a health fair tomorrow. The health fair is on colon cancer, and we are doing a display on the fat content in food because studies show that a high fat diet increases your risk of developing colon cancer. Anyway, the muffin I am handing out is low fat, and high fiber (and it tastes pretty good).

Another thing I have been doing at the Food Bank is calling organizations to see if they want a free freezer. Some people think it is a trick, but really we are giving out freezers, and what's more, they come full of "End Hunger" meals. Pretty sweet for those who can fit this freezer in their door. Making phone calls is one of my least favorite things to do--it is right up there with the moving process. But at least I am not calling people to collect money, eh?

It seems like high fat content and/or being overweight pretty much contribute to every disease.

I would like a freezer. :)

I think you inherited your dislike of phone calls from your Jones roots. At least I too am not fond of making the calls.

I was thinking about you today. We made corn cakes for our snack at preschool. Last week we picked the kernels of ears of Indian corn and then we put the corn through the wheat grinder. The flour had a purple hue to it. The corn flous seemed more fine then cornmeal but the pancakes ended up with a definite fiber feel. They were good - the kids were excited to have colorful pancakes - they actually looked more blue/green when they were cooked. Anyways it was a fun cooking experience and they were very low in fat too! woohoo!

Those sound like very healthy and yummy pancakes--that's cool that you ground all that up. If I could just get an ounce of your creativity, man I'd be set for life in the creative department.

Yeah, the fat content of foods kind of do contribute to almost every disease. I would like a freezer too, but this one is a 9-foot chest freezer. Too big for my place.
